GENERAL INFORMATION

AllSTARCH Vital Wheat Gluten is a natural protein made of wheat. Wheat gluten as a complex protein fraction is water insoluble and consists of low-molecular gliadines and high-molecular glutenines. The viscoelastic properties of gluten is built by these hydrated gluten fractions.

ALLSTARCH Vital Wheat Gluten is produced by a special processing of extraction of wheat flour slurry. Additional processing steps are drying, refining and classification. ALLSTARCH Vital Wheat Gluten is of outstanding quality with a high biological value and a specific amino acid distribution.

ALLSTARCH Vital Wheat Gluten complies with EU directive 178/2002/EC, with directive 1881/2006 for toxic metals (heavy metals) as well as with all further valid food law requirements.
